Blanc Manger: A Delicious Haitian Dessert
Blanc Manger is a beloved Haitian dessert. Haitian Blanc Manger is similar to the French version but with a tropical twist. Instead of the Almond extract, we use coconut milk and spices such as nutmeg and cinnamon.
Ingredients
- 2 1/2 cups of coconut milk – Homemade is preferred; if not, buy the best quality you can find.
- 1 1/2 cups of heavy cream
- 1/2 cup of sugar
- 1/4 tsp of vanilla extract
- 1 lime zest
- 1 envelope of unflavored gelatin
- 2 cinnamon sticks
- 1/4 tsp of nutmeg
Directions
- Combine coconut milk, heavy cream, sugar, lime zest, and spices in a medium saucepan.
- Heat the mixture over medium heat until it begins to simmer.
- Remove from heat and strain to remove the cinnamon sticks and lime zest
- In a small blow, sprinkle the gelatin over 1/4 cup of cold water and let it sit for a minute
- Add the gelatin mixture to the coconut milk mixture and stir until the gelatin has dissolved
- Add the vanilla extract
- Pour the mixture into individual ramekins or a large dish and chill in the refrigerator for at least 2 hours or until set
If you want something different, you can also add fruits to the dish. Mango, pineapple, and cherries are popular choices. You can add a splash of rum to give it a little kick.
