Blanc Manger: A Delicious Haitian Dessert

Blanc Manger is a beloved Haitian dessert. Haitian Blanc Manger is similar to the French version but with a tropical twist. Instead of the Almond extract, we use coconut milk and spices such as nutmeg and cinnamon.

Ingredients

  • 2 1/2 cups of coconut milk – Homemade is preferred; if not, buy the best quality you can find.
  • 1 1/2 cups of heavy cream
  • 1/2 cup of sugar
  • 1/4 tsp of vanilla extract
  • 1 lime zest
  • 1 envelope of unflavored gelatin
  • 2 cinnamon sticks
  • 1/4 tsp of nutmeg

Directions

  1. Combine coconut milk, heavy cream, sugar, lime zest, and spices in a medium saucepan.
  2. Heat the mixture over medium heat until it begins to simmer.
  3. Remove from heat and strain to remove the cinnamon sticks and lime zest
  4. In a small blow, sprinkle the gelatin over 1/4 cup of cold water and let it sit for a minute
  5. Add the gelatin mixture to the coconut milk mixture and stir until the gelatin has dissolved
  6. Add the vanilla extract
  7. Pour the mixture into individual ramekins or a large dish and chill in the refrigerator for at least 2 hours or until set

If you want something different, you can also add fruits to the dish. Mango, pineapple, and cherries are popular choices. You can add a splash of rum to give it a little kick.
