Haitian Fried Plantains
This recipe is simply for the records. This is one of the most popular appetizers in Haiti. It pairs well with “Pikliz” or dipping sauces such as garlic aioli or spicy mayo. I hope the recipe below help you make the perfect Haitian Fried Plantains!
Ingredients
- 3 plantains
- 1 bitter orange or lemon
- Salt
- 1/4 of canola or vegetable oil
Directions
- Prepare a bowl of lightly salted water
- Run the plantains under warm water. Peel the plantains and cut them into 1 inch thick
- Place them in the salted water
- Peel the orange with a knife and cut it in 2
- Rub the pieces of plantains with 1/2 of the oranges and soak for a few minutes in the same water
- Once the oil is hot, add the plantains to the pan and fry for the 1st time until golden
- Remove the plantains from the pan and place them on a paper towel to remove any excess oil
- Crush them between two wooden boards or place them on a wooden board and crush them with the bottom of a mug
- Soak for 10 seconds
- Fry again until both sides of the plantains are golden.
- Serve hot. Sprinkle some salt on top if needed
